A few years ago I had not even heard of coconut flour so the idea of baking with it was totally foreign to me. Now it is a staple in my kitchen and I have become very comfortable with this flour. But it is still not a flour I feel comfortable to substitute in recipes that call for more traditional flours.
Enter Starlene Stewart of GAPS Diet Journey who has a whole series of e-books that she has written with the how to of baking with coconut flour and lots of her original recipes to cover all kinds of occasions and tastes.

Mastering the Art of Baking with Coconut Flour is a great place to start as Starlene teaches you how to work with coconut flour in this book. Coconut flour is not quite the same as wheat flour or even gluten free flours and it takes some getting used to. But after reading this book and trying some of her recipes you will be very comfortable. And she even equips you to adapt your own recipes with coconut flour.

Starlene has 4 volumes in her series Coconut Flour Baked Goods (and more to come in the future). All of these recipes are grain free and dairy free.
Volume 1 is Sweet Quick Breads. Inside of this book you will find the recipes for 13 sweet fruity loaves, and the only flour is coconut flour. No nut flours, no starch flours, and no thickeners like guar gum or xantham gum. Some recipes do call for nut butters and nuts, and all recipes do contain eggs. All recipes are completely gluten-free, grain-free and sweetened with honey. The only processed sugars are in recipes which include optional chocolate chips.
Volume 2 is Pumpkin Treats. If you love pumpkin and need to avoid gluten, you are going to be totally thrilled with the recipes in this book. My favorite in this book includes the pumpkin brownies, but the pumpkin pecan pie and the pumpkin eggnog are two other recipes I want to try over these holidays.
Volume 3 is Holiday Quick Breads. Recipes here include a baker’s dozen worth of quick breads that are suitable to share at holiday gatherings, even with those who are not grain free. Recipes include Chocolate Cranberry Bread, Gingerbread, Cranberry Applesauce Bread and more.
Volume 4 is Chocolate Treats (This is my favorite because well chocolate…..) Recipes in this book include Cherry Chocolate Loaf, Peanut Butter and Marbled Chocolate Loaf, Raspberry White Chocolate Loaf, and 11 bonus recipes that are not breads but include hot chocolate, fudge and an amazing birthday cake.
Beyond Grain and Dairy.
