When my daughter went grain free I had to learn to cook with some new flours. One of those was coconut flour. I found it to be VERY different from anything I was used to, but after some time and some great recipes from some awesome bloggers I have not only gotten used to coconut flour but really enjoy it. It does require a large number of eggs usually to work well as the coconut flour is very fibrous and soaks up the liquid. I still am not comfortable to make my own substitutions of coconut flour for something else in another recipe, but I do trust these blogger friends and their recipes.
