Weeknight suppers sometimes are a real challenge to get together. Even though I am an at home mom, the days are full with lots of activities and responsibilities for my 4 children, my husband, and my elderly mother in law who lives with us.
I came up with this simple throw together one dish supper that is very forgiving for what you put with it. Everyone liked this dish very much and several told me it was a “make again.”
Sausage, Potato, and Spinach One Pot Supper

An easy throw together weeknight supper.

Ingredients
- 1 lb sausage, preferably from pastured pork
- 10 medium potatoes
- 3 cups of butternut squash, cut into pieces
- 3 cups fresh spinach
- 1 garlic clove, minced
- 2 bunches scallions, cut into small pieces
- sea salt and pepper to taste
- 1/2 tsp oregano
- 1/3 cup cheddar cheese
Instructions
- 1. Remove sausage from casing and fry until browned. (Add fat like lard or coconut oil if needed.)
- 2. Put potatoes and butternut squash on to boil in small amount water while sausage is cooking.
- 3. Once potatoes and squash are able to be pricked easily with a fork, remove from the water, remove the peels and cut into bite size pieces.
- 4. When sausage is browned, add garlic and spinach and cook until spinach is wilted.
- 5. Add in potatoes and squash and cut up scallions and cook until warmed.
- 6. Add salt, pepper, and oregano to taste.
- 7. Sprinkle with shredded cheddar cheese.
Notes
- To make this recipe paleo or GAPS legal, do not use potatoes and increase squash to 4-6 cups.
- Kale may be used instead of spinach or in addition to the spinach.

This does sound very good! I tried something similar this week with bacon! But love sausage too. Maybe I’ll try your recipe with brats. 🙂
